Kibbee B'Sineyee (Baked Ground Lamb with Wheat)

Prep time: 15-20 minutes 
Cook time: 25-30 minutes 

Filling
1 lb. lean ground lamb
1/2 cup pine nuts 
1 tsp salt & 1 tsp ground pepper

Brown all together in skillet and set aside. Preheat oven to 450°F

Kibbee
3 lb. lean ground lamb
2 cups medium ground wheat (burghul) 
1 medium onion, chopped fine - about 1 cup
3 tsp salt & 1 tsp ground pepper 
1 tsp cinnamon
1/2 cup butter

Wash burghul several times and drain. Add to ground meat, onion & spices. Mix and knead well until uniform.

Use some butter to coat the sides and bottom of 10" x 14" baking pan. Divide kibbee mixture in half.

Moisten hands with cold water, pat half of kibbee evenly into bottom of buttered pan.

Spread filling evenly across bottom layer.

Pat remaining half of kibbee evenly over filling, moistening hands as necessary with cold water.

Cut into diamond shapes, using sharp knife heated with hot water to making cutting smooth.

Dot top with thin pieces of butter.

Bake in oven for 30-40 minutes.

Serve hot.
